Why is it required for a customer to enter their email address on the checkout screen of the online store? Is it related to receiving a receipt? If we don't want to collect emails, is it an option to turn that field off?

Correct - it allows the customer to receive the receipt. Unfortunately, there isn't a way to turn off or remove the field.
