Pick Up without Delivery Prep Time

We are a handmade wood sign shop with a brick and mortar location and we are working to expand online. We have the shipping aspect solidified. Where we are struggling is with the 'Pick Up' option. Currently, the pick up option requires us to set up a pickup and delivery prep time which does not work with our business. At a minimum, we would like to have a an option in that drop down that says "We will contact customer". Ideally, a customer can select Shipping or Pickup In Store which provides a message that says, "You will be contacted when you order is ready for pick up, typically 1-2 weeks. 

 

Has anyone found a successful work around as it is clear that Square/Weebly does not plan to make any adjustments to this basic functionality any time soon.
