How do I view my variation options?

I went to add an item this morn and the variation option has disappeared! Did I do something to have it disappear? I don't like just the color option. Any suggestions?

To make sure i'm understanding, what device/app are you using to try and make these changes? Also, can you provide a screenshot of what you are seeing on your side? Thank you!
