Can I publish before I'm ready to sell

My organization has a plant sale once a year and uses Square.  It worked great last year.  We are getting ready for the fall sale and don't know what our inventory will be yet.  But, we will be advertising that our sale is coming up in October.  We would like to include the online address.  Can I publish even though nothing is there yet?  I'd like to have a statement on the landing page that says "Come Back on..... for a preview of what will be on sale starting...."

I would like to have people preview a week before the sale starts after we have added the inventory.  Is that possible?
