Hey @cstroud01, I see this is your first post, welcome! It's always great having new seller!
Outside of these retail reports (COGS and Margin report, Projected Profit report, Inventory Category report, Sales by Vendor report, and Inventory Sell-through Report), we don't have any additional reporting.
I am tagging @Candlestore who can hopefully provide a workaround! Thank you!

With Square there is not a way to enter a date when you enter your items or quantity. So Square is unable to see an Inventory by date. Only way to do this is either through your accounting inventory or every day download your Square Catalog. Save it as a Date. Then in the csv or excel file save a column labeled Date. In this column enter the day of the download and fill it down this column.
Then you would need to merge or append all these csvs to one giant csv and filter by date in a pivot table.
My suggestion is to use a accounting package. Most accounting packages need inventory and the item cost etc and then when you enter this information the package records the date so you can see on XYZ date your Inventory value is.
One of the reasons I always suggest people get an Accounting package that also tracks inventory if they track Inventory and are not just selling a service.
Now to do this on your own:
Create a Folder for example Square Catalog or Inventory
Down Load your Square Catalog daily to this folder. Open it create a Column Called Date and Fill that column with the date of the download.
With Excel open a Blank XLSX file
goto Data Tab Get data
CSV or Excel file and browser to the Folder with your Square Catlogs in them.
This will open the Power Query. Open all files with Catalog in the Name.
Save and Load.
This will take a minute or so.
You can then look at the Spreadsheets or click a cell then open a Pivot table to sort and filter by Date or Item etc.
Just easier to do with actual accounting software, which Square is just a Payment Processor with basic inventory features.
It can be done with Square but you need to use other software and learn Spreedsheets.

thanks for the input. We are a small non-profit organization with 1 or 2 plant sales per year, and just moved into using Square. We entered items/inventory in Square before our big sale in May, and didn't capture it separately. Sadly, I think that info was lost.
I appreciate the feedback
