Do subscriptions have to be set up by the seller or can customers do this on their end?

Yes, your customers can enroll in subscriptions right from your website, as long as you have the item set to be capable of a subscription purchase. That's enabled on each item in its item editor on the dashboard.

To build off of what @ryanwanner was saying, customers can purchase subscriptions through Square by accessing your online store or payment link, where they can select a subscription plan and choose a recurring payment frequency (like monthly or yearly) to automatically charge their chosen payment method on a set schedule; they can manage their subscriptions through their Square account on the your online platform.
