I run a service based business where customers send me film to scan.
We have a number of choices customers can make with their orders, such as a flat fee return shipment, discarding the film originals, and a few others. When customers check out, I'd like to have one of these options set as the default, but I can't seem to do that.
Is there any way to set a default option??

At this time, it's not possible to have a pre-selected shipping option set as the default when customers check out. You can, create multiple shipping profiles for the different options you offer, e.g a standard, or express shipping option. If you haven't already, get started here.
You can set a default fulfilment method under Settings > Advanced Settings in your Square Online dashboard if you also offer local pick-up or delivery. When your customers check out, they'd still be able to select a different option if available.

That's not so great because if I create a custom profile, you lose the ability to have multiple options. It seems like a pretty big oversight IMHO. Any chance this can be fixed? Or at least do something to more the shipping options more clear to customers when checking out...sometimes it's almost like the options are hidden from customers.

You can create a shipping profile with multiple options. Once you create the profile and save, go back into the profile to edit, and you will be able to add more options.
