It would be fantastic to have the ability to add verification checkboxes to the checkout process in the store ("I have read the terms and conditions on the website"). It's very important for us, because we risk receiving substantial fines. We are waiting for a kind reply

While we don't have anything exactly like that available, you may want to checkout Square Contracts. It may help you 

establish clear service agreements with your customers, secure digital signatures, and avoid potential payment disputes.

It is not about disputes with customers but about the privacy law present in the EU.

Customers must give their consent for the processing of data compulsorily, by ticking a box for example.
