I have a Mobile Service. How do I remove my business address from the Service Checkout Flow.

I ONLY want the client to see a choice for "We come to you!"

It sounds like you are asking about your Online Booking Site through Square Appointments, correct? If so, you'll need to go to your Square Dashboard and select Appointments on the left. Then, you'll click Settings > Calendar & Booking. From here, you'll select the option that says "at the customer's location" under Appointment Preferences, as shown below.
