Example:
I offer repotting services, I want a customer to be able to select multiple options within the "repotting services" because there are multiple options with repotting, and often customers want more than 1 plant repotted, but that is at an additional cost.

Hi there @carolj and @MBL-Jacky 👋 I checked in with the Square Appointments Team on this one.
They let me know that the ability to select more than one variation of a service while booking is currently a feature request. To learn more about how feature requests work, please see this post from one of our Seller Community Moderators.
In the meantime, you can add additional information into the Appointment notes section, or send out a contract with custom clauses if you have Appointments Premium or Invoices Plus. I hope this information is helpful but please do let me know if you have any additional questions.

is it possible to select more than one variation on the same drop down menu from the customer side?

I have created multiple services with variations but my customers are only allowed to select one variation from the same service list.

There are currently no settings that allow multiple variations of one service to be selected by the customer.
If there is, then I wasn't able to find it because I needed it before too.

Maybe i'm missing something but I can only select one variation for a service at a time? I don't see how variations are a workaround otherwise, as I can't select multiple ones...
