How do I customize the sales trends page on my dashboard as well as my home page?

As a bar, I want to look at daily sales on a basis other than a calendar day basis. I have set up my deposits to include sales up to 5:00 a.m. and I run my sales summaries to go from 11:00 a.m. to 5:00 a.m. but all my dashboard activity as well as my monthly summaries and sales trends assume a calendar day.

As for your question, while we don't currently offer this functionality with our Sales Trends report, I can definitely understand where you're coming from.
