Is there a way to download orders in Google Sheets and possible create a custom sheet with only the columns I want?
The CSV excel sheets have a ridiculous amount of columns!
Also, I have an item with quite a few variations. How can I have the order report so all variations have their own column?

Good questions, all. As it stands now, our reporting exporting feature only allows for a CSV or Excel export, meaning that exporting to Google Sheets directly would be considered a Feature Request.
I did, however, seem to find a helpful resource to walk you through converting a CSV to Google sheets. You can manually discard of any columns you feel like you won't need. Hopefully that will get you where you need to be! I am happy to pass your feedback and suggestions along to our Product Teams.
In regards to variations on reports, this info should be displayed in your CSV in its own separate variations column. I tested this out on my side to double check. What device are you using to access and download your reports?
I will keep an eye out for your response!

How can I get a report to print with only certain column? Mine goes to AT!
All my variations customers need to pick, print in a row per the order like this:
Thanksgiving Catering | Variation : Whole Cooked Turkey, Choose 3 Sides : Stuffing, Choose 3 Sides : Mashed Potatoes, Choose 3 Sides : Sweet Potato, Choose a Pie : Apple, Additional Notes (i.e. No seasoning, Extra butter,...) : Extra Butter on Potato, Tree Nut Allergy |
