We'd like to be able to have a menu item appear one way on the online menu (HAM SANDWICH) and a different way when printed for the kitchen (3OZ HAM SANDWICH), for example. Is that possible?

On the regular Point of Sale, there isn't a way to have the printers print something different than what the item name is. Not sure if there's a way to do that in the Restaurants app.
That said, I did discover a little "tweak" that you can use. On your item page on the dashboard, click on the "Edit Variation Details" link on the variation. Change the name "Regular" to 3OZ (for your example). When the item prints, you should see 3OZ under Ham Sandwich. If it doesn't print, all you have to do to make it happen is to add in another variation, save the item, then go back in and delete the added-in variation.
Hack? Most definitely. But it seems to work. The customer won't see the variation list at all provided you only have one variation.

Hello,
We want our orders to be printed in full with an option to course the meals. Unfortunately, we are having difficulties with your newest updates, and our kitchen is getting partial orders, even after they were sent as one.
