How do do fulfillments on specific categorize items for online store?

I’ve been messing around with Square fulfillment category scheduling and left scratching my head even further.  This is my goal with using Square online: 

We have a specific day (Sunday afternoon) where we food pickup based on preorder during the week, for example, food pickup / in-house delivery is scheduled for only Sunday noon-2pm.  Food order is active for preorder starting on Wednesday of the same week.  Ideally what I like to see is preorder is collected on Wednesday afternoon until Saturday night, then order is collected for production on Sunday morning, and fulfillment (pickup/delivery) in the afternoon (noon - 2pm).

 

Additionally, there is a category on my Online store that is categorized as “Pantry items”  and  “Baked goods”, which I like to have available every day of the week for delivery/pickup from Noon - 5pm

 

Summary:  Would like to have the store be available for online and same-day pickup/delivery from noon-5 on specific category (Baked goods / Pantry items) every day. Food menu is updated on Wednesday and accepts preorders and food menu will not get fulfill until Sunday (noon - 2pm), while Pantry /  

 

 

 

The issue: 

 

Initially, I have setup my location hours is from noon-5pm every day, and I have set up my items category (Baked goods and Pantry) as available every day (Monday - Sunday).  And setup my food order category is only available from Wed-Saturday.  However on Wednesday - Saturday I am getting order from my food category on Saturday which is not available.  As a result, currently my store is only hours is Sunday (noon-pm).  And I am not offering pantry / baked goods until I figure out a solution. 

 

 

  

Thank you and hopefully, there is a way to resolve these scheduling issues.
