How do I set up a coupon so the discount is applied for a limited quantity of one item?
I have an event item with a coupon built in for members. But don't want the members to purchase more than they are allowed on the coupon. So if they are only allowed 2 using the coupon and try to purchase 3...Can the coupon only be set up for the 2 and the 3rd at normal price? Also, there will be 4 events in the year that they're allowed to use the coupon for the 2 at each event...not more.

You may need to play around with the Maximum Discount amount in the discount settings. The problem with Square discounts is that it is by Transaction, not by user. So if you set a limit that the Coupon can have a Maximum of $5 off (Value of your Discount) for the purchase of 1 Item, then if the person comes back in 2 hours they may get that discount again, but if they buy 4 items at one time they would only get the one discount applied. I would suggest reading about Creating Discounts : /3955-create-and-manage-discounts,
and then try them out by adding the item that the discount applies to in your cart to see if the discount applies the way you want. Then adjust the discount rules till they work as intended. After each attempt just delete the cart instead of running a purchase wants you can get the Total your looking for repeatedly.
