Getting client contact info from a dated transaction
I need to look up contact info from a certain transaction period. 1/16-1/19 2020. I can get the transactions but I need to get the actual contact info (name and email) from those particular transaction dates

Did you or the customer enter their information on the transaction whenever it was taken?
If not, then it wouldn't be saved. The customer has to elect to save their information, it isn't automatically captured at the time of checkout.

Yes. They all at a minimum provide their name and email address, which is all I need

If the customer's information was saved at checkout, you would see them in your Customer Directory. Are they showing up there at all?
Also, you should be seeing it in your transactions too- if it was saved successfully.
From what you're describing it sounds like it wasn't, but here is a Support Article on how to manage your Customer Directory (add, edit, delete, etc)
