Hi @04auston. Sounds like you are new to Square, so first welcome. And welcome to the Seller Community. You’ve definitely found the place where other sellers can help you find solutions and get up and running quickly.
I’m not sure exactly how your items are set up, but you have two options here. If you aren’t already using item variations for something (like Small Plate and Large Plate), you can use them for the purpose of specifying the protein. Just add a variation for each protein. The only caution I’ll make here is that the first variation will always be the default. If you don’t want a default to be sure that your servers are actually picking one then you’ll want to use the next option.
Besides variations, Square has modifiers. Modifiers are grouped into modifier sets. You can have a set for proteins, another for side dishes, etc. Here is a link to the help document on modifiers. In your case, you will add a modifier set called Proteins, list the available proteins. Then, when you add this modifier to the appropriate item(s), you can specify things like the minimum and maximum choices that are allowed, default choices (if any), etc.
