Online Order Acceptance Charges
When my customers order online it automatically charges them & "accepts the order". Is there a way to keep that order as pending until I accept it or mark it as "in process". Because I am having issues with people ordering & not avail for the day they ordered (I am a bakery) then I have to cancel it. Also people are ordering for 1 1/2 weeks out for Easter weekend & they were not expecting to be charged immediately they want to be charged closer to their pick up date. For example the day before when I change their status to "in progress" I think only at that point should it be accepted & charged. Am I missing a setting??

You should be able to allow your customers to schedule an order for pickup, limiting them to only the dates that you have set to be available for pickup orders, @droidbaker. It sounds like you are currently have In-Store Pickup enabled, however you may not have enabled the setting that will allow your customers to schedule their pickups.
This guide outlines how to enable in-store pickup for your online store, as well as how to set your pickup hours. Note that although your business hours will automatically be pulled here from your Square Dashboard, you can edit your pickup hours if pickup availability is different than your regular business hours. You can even add multiple ranges for multiple time frames throughout a single day, or add "prep time" if you have products that take a little longer to get ready.
At this time, there isn't a way to set orders as "pending" before you accept them using the online store. A lot changes are being quickly implemented within the online store at this time - if we have anything to share related to this feature request, we will be sure to post an update here.
Making the above changes to your pickup settings should help reduce the confusion with your pickup orders, but I'd also like to throw out one other suggestion. If you'd prefer not to use online ordering, I saw that one bakery has provided an order form on their website, and it looks like they're sending invoices to their customers once they have accepted an order. This would work if you'd like to charge your customers after accepting an order from them!
