When saving customer credit card as a new ticket (tab for bar) after selecting new ticket and then swiping credit card to open the ticket it defaults to the cash out and tipping screen. at this point in order to save the ticket we have to hit cancel payment. This needs to be fixed asap, it has slowed down service and led to several payments occuring instead of opening a tab and explaining the issue to the customers.
In addition, we attempted to remove the tipping option from settings. Upon doing so, after swiping credit card the "processing" screen opened and spun without clearing until we manually closed square from iPad open apps.
Upon returning to square app the customers card was saved with the ticket but obviously this is not ok.

It sounds like you might creating an open ticket in a way that it's going straight to closing out the ticket. Check out this section from the help article specifically about creating and managing open tickets. After adding items to the sale, you'll want to tap new ticket or swipe the card, but not one and then the other.
I think it's also worth looking at our Square App troubleshooting steps to make sure the app is working correctly.
