Are you talking about when you take the order? I know you can change/add an address on Square dashboard and POS. On the dashboard just click on Customers and search for the customers name. On the POS, tap More/Customers and search for the customers name there.
I don't know if you can enter the info at checkout with Square KDS, we don't use that service, because we are not in the food business, maybe someone that is can give you more info on KDS.

You can’t add any details to orders from the KDS at all.
I really don’t understand the question though!
how does a delivery order work now if you don’t have their address @Hillside ?

We run a florist.
We want to ability to place delivery orders through the POS that connect to our third party app (cartwheel) that our drivers use to deliver flowers more efficiently.
Currently square does not have a place to put address. They only have the simple "ticket name" that can't be connected on the back end.
This makes me so frustrated. For customers who order online, they have a delivery option. Why can't manually inputted order have this as well.
