I am a business consultant in the UK and I want to take payments in USD and deposit in the US
All my customers are US companies and I have a US bank account in New York. I want to issue invoices from Xero in USD and attach a payment link and have the funds deposited into my USD bank account in the USA.
I have not signed up to Square yet but I would like to know if this is possible.

To charge customers in USD and link a USD bank account, you will need to create a US Square account. It's important to note that when processing payments and issuing invoices with Square, you'll need to be located within the country where you activated your Square account. So it'll be best for someone from the US branch of the company to create the Square account.
If you'd like to use Square while you're in the UK, then the best thing to do is to create a UK Square account. You can process internationally issued cards bearing a Visa, MasterCard, American Express, Maestro, Visa Electron and Vpay logo with this account. Keep in mind, cardholders may be charged for currency conversion by their card issuer since payments must be processed in British Pounds. The linked bank account must also be a UK-based bank account in British Pounds.

We are physically located in the UK but we bank in the USA and issue all our invoices in USD. We do not have a US postal address and but I do have a SSN. Can I still open a US account?

In that case, Square doesn't sound like the most suitable payment processor. As you're physically located in the UK, you'd need to open a UK Square account to process payments with Square.
